Red White and Blue Salads for A Delicious Sandwich Generation Summer

Got some interesting salad recipes to share with you – that can easily be converted into Red White and Blue tasty treats for fun family picnics this week and next.

Catalina Picnic Salad Make It Red White and Blue

There's already plenty of red in this salad. To add the white and blue, include a big side dish of sour cream (ideally in a bright red or blue bowl), along with some blueberries (best in a white or red bowl), just to look pretty and blue – plus you can add some shredded red cabbage to the salad – making it even healthier and lending a purply-blue shade for our Patriotic salad. 🙂

 

What You Need:

  • 1 (16 oz.) can kidney beans, rinsed and drained
  • 1 (15 oz.) can shoe peg corn, drained *
  • 1 zucchini, chopped
  • 1 cucumber, chopped
  • 1 tomato, chopped
  • 1 green pepper, chopped
  • 1 red onion, chopped
  • 6 green onions, chopped
  • 1 (3.8 oz.) can ripe olives, drained and sliced
  • 1 C Catalina salad dressing
  • 1 1/2 C cheddar cheese, shredded
  • 1 1/2 C of corn chips

How to Make It:

Place the beans and corn into a large serving bowl and toss to combine.

Fold in the zucchini, cucumber, tomato, green pepper, both onions and the olives.

Pour the dressing over the mixture and stir until well coated.

Sprinkle the top with the cheese and the corn chips.

Makes 10 servings

If your boomer and senior gardening is doing better than ours, be sure to make the most of your garden vegetables with this tasty salad.  The dressing gives it a little bite and the corn chips give it a little crunch. 

*The term "shoepeg corn" dates back to before the American Civil War. The corn was named for its peg-like shape. Shoepeg has smaller kernels and is sweeter than yellow corn. If you cannot find it at your grocery store, substitute either regular white or yellow corn in your recipes.

Colorful Floret Salad

With the cauliflower and tomatos, it’s easy to make this a  RED WHITE AND BLUE salad by replacing the Feta Cheese with Blue (Bleu) Cheese sprinkled on top. 

What You Need:

  • 1 head of cauliflower, cut into florets
  • 1 bunch of broccoli, cut into florets
  • 2 C of cherry tomatoes
  • 2 carrots, sliced thin
  • 1 (6 oz.) can small ripe olives, pitted and drained
  • 1 C Italian salad dressing
  • 1 envelope Italian salad dressing mix
  • 1 C feta cheese, crumbled

How to Make It:

Place the cauliflower and broccoli together in a large serving bowl.

Gently fold in the tomatoes, carrots and olives.

In a small mixing bowl whisk the salad dressing and the dressing mix until blended together well.

Pour the mixture over the vegetables tossing to coat.

Cover and refrigerate at least 4 hours.

Before serving toss again then sprinkle the top with the cheese.

Makes 12 servings

The longer this salad stays covered in the refrigerator the better it will taste.  Cooling it helps the Italian flavors to blend into the vegetables.  Any summer garden vegetables will work in this salad including chopped zucchini or cucumbers.
